I stayed at Stelios Place this summer. It was very cheap and very nice. Our double was about $30 per night and close to the beach.

All the Hotels that are on the non-caldera side of the isle are fairly cheap. Try the hotels near Kamari, Perissa, etc. Anything but Fira, Ia, Imerovigli.
